RECIPE OF THE MONTH (October 2009)

In honor of National Pumpkin Cheesecake Day on October 21st.

Pumpkin Cheesecake Recipe

Cake Ingredients:

2 Sticks (One Cup) butter

3 eggs

2 1/2 Cups flour

1 Cup sugar

1/2 Cup pumpkin (canned or fresh pureed)

1/2 Cup sour cream

1 tsp. vanilla extract

2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. baking soda

1/3 tsp. salt

Filling Ingredients:

8 oz. cream cheese

1/3 Cup sugar

1 egg

1/4 Cup canned pumpkin

1 TBS. corn starch

1/2 tsp. vanilla extract



• In a mixing bowl, beat ingredients until very smooth.
• Set aside and prepare cake batter.
• Pour into glass dish on top of batter as described in cake


1. Pre-heat oven to 350 degrees.
2. In a large bowl, cream butter, sugar, and vanilla until light and fluffy.
3. Add eggs and beat well.
4. Add flour, baking powder, baking soda, cinnamon and salt.
5. Mix in pumpkin and sour cream. Blend thoroughly until smooth.
6. Pour 1/2 of batter into a buttered 13x9 inch glass baking dish.
7. Add the filling mix, spreading the batter evenly in the dish.
8. Add remaining batter and lightly swirl into filling.
9. Bake for 50 - 55 minutes.
10. Allow to cool.

Serves 12.

This month, we have two pumpkin-themed recipes for your eating and drinking pleasure!


Pumpkin Bread* Recipe

3 cups all-purpose flour

2 cups sugar

2 teaspoons baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon salt

1/2 teaspoon double-acting baking powder

1 (16oz) can pumpkin (2 cups)

2/3 cup vegetable oil

3 eggs, slightly beaten

• Pre-heat over to 350 degrees.

• Grease two 9" x 5" loaf pans.
• In a large bowl, with fork, mix four with the next six ingredients.

• Add remaining ingredients and mix just until blended.
• Turn batter into pans.
• Bake for 1 hour, or until toothpick inserted in center comes out clean.
* Cool in pans on wire racks 10 minutes.
• Remove from pans and cool completely on wire racks.

Pumpkin Spice Martini Recipe

1/2 oz Sylk Cream Liqueur
2 oz vanilla vodka
1/2 oz pumpkin liqueur or pumpkin spice syrup
1 tsp whipped cream
cinnamon stick for garnish

• Pour the Sylk Liqueur and vodka into a shaker filled with ice.

• Shake Well.

• Add the pumpkin liqueur or syrup.

• Shake again.

• Strain into a chilled cocktail glass.

• Top with a teaspoon of whipped cream.

• Garnish with a cinnamon stick.
